This vinegar was made from 1992 base wines using the oldest and slowest "Orleans" production method.  Over time, in part and full old American and French oak barrels, the wine has gone through acetification, and soft complex vinegar flavours and aromas have developed.  Always bear in mind the old saying that when dressing a salad you need "a miser for the vinegar, a spendthrift for the oil and wise man for the salt".  Good luck and great salad days!
