Go Crackers

One of the big no nos on my dietary dont go there lists is any type of refined vegetable or seed oil. Cold pressed sunflower seed oil, okay- gets the tick, regular, refined sunflower oil? I am reaching for my asthma inhaler and feeling like I have rolled down the hill at the back of my farmhouse and hit every rock on the way down! And don’t even get me started on canola or vegetable oils!
Add to this no butter or ghee, no grains, no soy and I was facing a steep learning curve, the sweet stuff I mastered pretty quickly, but I still missed that CRUNCH, that crunch that only crackers, or toast, or crusty bread or crisps can bring. For a while I was lost in an ocean of bland textures, and yes, carrot sticks crunch, but if you are hankering for a cracker a carrot stick is not much of a substitute!
So then I discovered seed crackers, but a lot of them have rice or buckwheat, which I can’t eat, or soy lecithin to help bind them, which does not agree with me at all, or they are thick and stodgy and not what I was looking for, and so, back to the kitchen! And after many test batches, our Go Crackers were born. Thin enough to snack on like a corn chip, thick enough to balance a dollop of dip on one end, rich in garlic and chives, the only problem with them is getting any for myself as they tie up the oven for hours and hours and Karen keeps selling them!
But anyway, if you are looking for a guilt free crunch and something truly insanely delicious to put on it, try our Go Crackers with this complimentary recipe. This is a cashew dip, or cashew cheese, I would call it a cashew butter because my husband, who is dairy intolerant, uses it as a butter substitute on his toast (sigh – toast), anyway, give it a bash, is scrumptious!

Cashew Dip

180g raw cashews
1 1/2 tsp salt
1 tsp garlic powder
Juice one lemon
1/2 cup water
1/4 cup olive oil
1 tbs dried chives

Soak cashews for 4-6 hours. Drain, rinse, drain, put all ingredients in food processor or blender, I use my nutribullet for a really smooth buttery finish, pulse until very smooth. Serve with Go Crackers or crusty bread or vegie sticks or whatever you like.
Store remainder in the fridge and eat up within a week.
